This meal plan for the week is coming to you again some steep odds against it. Everything has been intensely crazy with my Dad since last week. He’s currently in the hospital and I’m frantically trying to find him an apartment in my neighborhood so I can look after him when he’s out. We ended up eating a couple of unplanned restaurant weeks because of the turmoil and I want to minimize that even though I know it will continue to be hard, at least for a while.
I haven’t been sleeping that well and it’s been tough juggling deadlines with everything else going on. I did say how important the meal planning is to my well-being so I put one together for the week and sent Dan to the grocery store with a list. I expect more chaos this week and we made end up straying from the plan, but at least the plan is in place.
Here it is:
Portobella burgers on sprouted wheat english muffins with pesto. Salad with crispy pancetta and cheese.
Chicken meatballs with tomato sauce and zucchini noodles.
Salad with lentils, pancetta and hard boiled eggs.
Cranklin’ chicken with side salad
